    Cheesy Chicken Fajita Pasta

    Loaded with chicken, pasta, fresh veggies, and a creamy, cheesy sauce, Cheesy Chicken Fajita Pasta is one meal your family won’t want to miss.

    Cheesy Chicken Fajita Pasta

    This Creamy Chicken Fajita Pasta doesn’t require a lot of ingredients and it is ready in 50 minutes or less.

    What’s In Fajita Pasta?

    • Pasta
      You can use macaroni, penne, or any pasta you like
    • Seasoning
      You can use store-bought Fajita seasoning, or you can use taco seasoning. Or you can make your own!
    • Veggies
      Combination of bell peppers for color. You can use red, yellow, green bell peppers.
    • Meat
      We usually use chicken – breast part. But you can use chicken thighs. If you not into chicken, you can use shrimp or even leftover steak.
    • Sauce
      Milk or cream is perfect. But if you like you can add chicken stock to give you more flavor!
    • Cheese
      Make it EXTRA Cheesy! I suggest adding some cheese on top. Yum!! For this recipe, we used Real California Pepper Jack. This cheese is flavored with sweet peppers, chilies, and herbs for an extra kick. But you may use other types of Real California cheese too.

    How to Make Chicken Fajita Pasta

    Heat oil in a large pot over high heat. Add chicken and cook about 5-6 minutes or until no pink is visible, then take the chicken out.

    Add the bell peppers and onion, cooking until the onion is translucent, about 6 minutes.

    Add the chicken back to the pot with salt, pepper, chili powder, cumin, and garlic powder, stirring until evenly coated, about 30 seconds.

    Add the milk (or milk plus chicken stock) and the pasta, stirring constantly to prevent any pasta from sticking.

    Cook for about 20 minutes until pasta is cooked and the milk has reduced to a thick sauce that coats the pasta. Add the cheese and mix until melted.

    Serve and Enjoy!
