The fiesta season just started at the F1 Hotel Manila as it launched its annual Filipino Feast: “LuzViMinda 5” last June 8, 2017. Diners can once again enjoy Filipino Cuisine in its finest. This year’s theme is Gastronomical Fusion which features the creations of Mikel Zaguirre, Dennis Uy and Kalel Chan. As with the previous years, guests are excited to see what the LuzViMinda Feast has to offer.
The feast was opened with a ribbon cutting ceremony lead by F1 Hotel’s Director of Sales & Marketing, Cindy Brual, together with special guests Department of Tourism Asec. Frederick Alegre, PEZA Director General Charito Plaza, LuzViMinda 4 Guest Chef Nancy Lumen and Ms. Philippines Earth 2016 Loren Mar Artajos.
As we celebrate the Philippine National Independence Day, F1 Hotel Manila brings us gustatory treats that boasts of our traditional flavours. But that’s not all, the LuzViMinda 5; Gastronomical Fusion also highlights modern culinary techniques that bring out the best in our traditional dishes.
Executive Chef Decker Gokioco heads the team with the three guest chefs adding their great ideas in the feast.
Representing Luzon is Mikel Zaguirre who was quoted “It’s an honor to do Filipino food and uplift Filipino cuisine.” This is actually the sole purpose of LuzViMinda feasts since it was first launched. “Each item was inspired by an heirloom dish which was meticulously crafted by research and adjusted a little bit to adapt the modern palate.” added Zaguirre. He also mentioned that “Unleashing creativity by presenting classical cuisine in a modern setting.” is what challenged him the most.
Dennis Uy is staged as the featured chef for the Visayas. His technique is focused on blending flavours and getting inspiration from his travels across the country. He likes to cook in the most traditional way and add a modern touch to his dishes by plating it contemporarily. According to him “Sharing our cuisine by giving back to guests & clientele is what food is all about”. Guests can look forward to the Cochinillo de Cebu and Pork Humba which are just two of Chef Dennis’ masterpieces.
He may not be a native of Mindanao but Kalel Chan has wholeheartedly accepted the challenge of serving sumptuous dishes from Mindanao. Armed with his passion for food, Chan studied classical Mindanao Cuisine to get a feel of their distinct flavours. He also reached out to some of his friends to help him with his research. Chan combined these learnings with his own modern way of cooking to deliver the flavours of Mindanao in the LuzViMinda 5 feast. When asked about his creations, he replied “You should try everything, as we (with his team) started from experimental stage, plus the time devoted to research & development trying these dishes, are the things that make these worthy”.
The Filipino Feast LuzViMinda 5 launch was held at F All-Day Dining. They will continue to showcase Filipino dishes as they serve to be an advocate of LuzViMinda and its desire to uplift Philippine cuisine. The annual LuzViMinda feasts allow us to add a touch of modern culinary artistry in our dishes without losing the traditional essence of classical Filipino cuisine.
