It was in 2001, a year before his catering business Town’s Delight Catering turned 30, when Andrew Pacumio thought of doing something that would allow them to give back to their kababayans the support that they gave Towns Delight. It was then that the concept of putting up Republic of Cavite was born. Pacumio wanted a venue that will not only showcase the historical places of Cavite but at the same time promote the province’s native delicacies. Architect Ritchie Corcuera and historian Prof. Emmanuel Calayro, who are also proud Cavitenos, were tapped to be part of the team that would help execute Pacumio’s ingenious concept. A year after that, the new Republic of Cavite (ROC) was inaugurated.
Located in Brgy. San Agustin, Trece Martires City, Cavite, Republic of Cavite is a four-storey restaurant and occasions venue that features rooms and function halls named after historic places. Its edifice is a replica of Gen. Emilio Aguinaldo’s mansion in Kawit, Cavite, where Philippine Independence was proclaimed. The three ‘meeting rooms’ dubbed as Silid Mapagtiis (a political party in Gen. Trias), Silid Magdiwang (in Noveleta) and Silid Magdalo (Gen. Aguinaldo’s party in Kawit), can be used for small gatherings. Looking for the perfect venue where private meetings can be held? Then the Sala De Gobernador (Seat of Supremacy) which is situated in the attic could be what you are looking for. Another popular ROC venue is their spacious garden which can accommodate a maximum of 300 guests — perfect for weddings and debuts.
ROC is proud to feature dishes cooked Caviteno-style utilizing ingredients that are widely found in Cavite. Among the must-try dishes are Cavite Express, Crispy Binagoongang Baboy, Adobong Kabitenyo and Sinampalukang Inihaw na Manok.
Cavite Express uses only “Kalumbahin”, a variety of coconut that produces a sweet and sumptuous taste of coconut milk. The dish is made healthier by using Halaan from Salina and Native Tinapang Salinas giving it the distinctive flavor that only ROC can offer.
ROC’s Sinampalukang Inihaw Manok consists of chicken marinated in their secret sampaloc sauce that is grilled to perfection and served with their own sampaloc vinegar.
Another hit among its patrons is Lihim ni Aguinaldo, a delectable dessert consists of suman sa ibos, chico and mango topped with ice cream and pinipig.
Republic of Cavite is truly the perfect destination for food connoisseurs and history enthusiasts.

Natakam ako! I should make a to-do-list of the things I want to do when I come home. It has been over 4 years. I have so many things in mind that I want to try to eat, visit and do some fun activities. I don’t think a 2-week or 1 month vacation if enough for me to accomplish what I need to do in the Philippines.
